There are many different types of peaches, all excellent for preparing a delicious jam. Today I made my peach jam using sweet clingstone peaches, a little sugar, and a lemon. And in just a few minutes, you can also prepare a thick and delicious yellow peach jam without any preservatives. Ingredients for the Peach Jam
- 4.4 lbs peaches (to clean)
- 24.69 oz sugar
- 1 lemon (untreated)
How to Prepare Homemade Peach Jam
Wash the lemon. Cut the peel and squeeze it to extract the juice. Wash the peaches. Peel them and cut them into small pieces, removing the central pit. Place the peaches in a bowl, add sugar, lemon peel, and juice. Stir with a spoon and cover the bowl.
Store it in the fridge for at least 3 hours or even longer. This will soften the fruit, shortening the cooking time of the jam. After the time has passed, remove the lemon peel, which will have released its pectin into the fruit.
Pour the fruit with its liquid into a thick-bottomed saucepan and cook the Peach Jam over medium heat for about an hour and a half. The time is indicative as it depends on how ripe the peaches are. Stir often with a wooden spoon to prevent sticking to the bottom and check the cooking.
To check the consistency of the jam, I prepare a plate in the fridge to cool it down. Pouring a spoonful of jam onto the cold plate, if it doesn’t slide down immediately when tilted, the jam is ready; otherwise, continue cooking for another 10 minutes.
If you want a jam without fruit pieces, you can blend it with an immersion blender at the end of cooking. Transfer the Jam while still hot into the jars. Seal them well and invert them until they cool. The hot liquids, as they cool, reduce in volume creating a sort of vacuum that, along with the high sugar content, prevents bacterial growth.
Once cooled, turn the jars upright and store the Jam in a cool pantry. It keeps for about 8-10 months. Once opened, store the jar in the fridge for 8-10 days.
