Ingredients for Pescolino Liqueur
- 1.5 lbs nectarines
- 2 1/8 cups pure alcohol
- 2 1/8 cups water
- 2.5 cups sugar
- 2 cinnamon sticks (optional)
How to Prepare Peach Liqueur
Wash the peaches. Peel them and cut them into 4 or more parts. Transfer the peaches into a large jar. Add the peach pits and 2 cinnamon sticks. Add the alcohol and seal the jar. Turn it upside down to mix the contents. Store the jar in a cool, dark place for about 10 days.
However, you need to give it a stir every day by turning the jar upside down. Prepare the syrup by dissolving the sugar in the water in a saucepan over medium heat. Bring to a boil, turn off the heat, and let it cool.
Strain the alcohol, removing the peaches and cinnamon. Add the water and sugar syrup to the flavored alcohol and mix. Pour the Peach Liqueur into clean bottles and let them rest in a cool place or in the fridge for 2-3 days before tasting.

The peach liqueur can be stored for a few months in the fridge or freezer
For a less alcoholic liqueur, you can replace 96° alcohol with 40° white grappa
The cinnamon is optional, if you don’t like the taste you can simply omit it from the recipe
