There are different types, distinguished by size, flesh color, skin color, and surface hairiness. I love devouring them but also using them in the kitchen to prepare many desserts and, why not, even some savory recipes. Today I want to tell you my simple recipe to prepare very soft and tender Peach Muffins. Just imagine how soft and delicious they are and they are really easy to prepare. A jar of yogurt in the batter makes them light and delicious. They are special for breakfast, as a snack, or anytime during the day for a sweet treat. Let’s head to the kitchen and prepare the Peach Cakes together.

Ingredients for Peach Muffins
- 2 eggs
- 1/2 cup sugar
- 1 container plain yogurt (or peach-flavored)
- 1/4 cup butter (melted)
- 1 1/3 cups flour
- 4 cups peaches
- 1/2 packet baking powder (8 grams)
- q.s. powdered sugar (for decoration)

How to prepare Peach Muffins
To prepare these Peach Desserts, I used clingstone peaches, but you can use your preferred type of peaches. Wash the peaches, peel them, and cut about 24 slices for decoration and cut the rest into small cubes.
Beat the 2 whole eggs with the sugar using an electric mixer for 5-6 minutes, until you get a light and fluffy mixture.
Add the melted butter and a jar of plain or peach yogurt. Mix.
Continue by adding the sifted flour and baking powder. Mix well. Add the peach cubes and fold them into the batter with a spatula.
Place silicone cupcake liners on a rectangular baking tray. Fill them 2/3 full with the batter. Place 2 peach slices on the surface of each muffin, letting them sink slightly into the batter.
Cook the Peach Muffins in a preheated oven at 350°F in static mode for 24-25 minutes. Always perform the toothpick test to check for internal doneness. Let them cool and decorate with powdered sugar as desired.

If you prefer, you can replace the Silicone Muffin Liners with classic paper liners placed in the appropriate mold with cavities
You can replace the butter with 50 ml of light seed or olive oil
The Muffins stay soft and tender in a container for 2-3 days
