Polenta crostini with pesto, stracciatella and anchovies — tasty and flavorful. The recipe I’m sharing today was born by chance from a leftover polenta I had in the fridge. I decided to make grilled polenta which I then filled with basil pesto, stracciatella and an anchovy fillet. A perfect pairing of aromas and flavors that creates a special appetizer. Ingredients for Polenta with stracciatella
- 1 2/3 cups cooked polenta
- 7 oz (about 7/8 cup) stracciatella
- 12 fillets anchovies in oil
- 7 tbsp pesto
- A few leaves basil
How to prepare Polenta Crostini with pesto
I used a portion of leftover polenta, but you can also prepare polenta by using about 3 oz (approximately 2/3 cup) instant cornmeal and 300 ml (about 1 1/4 cups) water. Pour it into a small oiled rectangular pan and let it cool.
Slice the polenta into thin pieces. Grill them on a hot griddle, bake them in the oven, or use an air fryer. Spread a layer of pesto on each slice. Continue with a tablespoon of stracciatella and finish with a drained and rolled anchovy fillet.
You can add a few basil leaves before serving. You can prepare them in advance and reheat briefly just before serving for a few minutes in the oven or air fryer or for one minute in the microwave.
