Ingredients for Baked Potato Balls
- 1.3 lbs potatoes
- 1/2 cup breadcrumbs
- 1 egg
- 1/2 cup grated Grana Padano
- extra virgin olive oil
- to taste salt
How to prepare Air Fryer Potato Croquettes
Peel the potatoes, wash them, and let them cook in salted water for about 20-25 minutes. The cooking time for the potatoes depends on their quality and size. Therefore, I recommend choosing potatoes that are not too large and roughly the same size to ensure even cooking.
Drain the potatoes, transfer them to a bowl, and mash them with a potato masher. Separate the egg yolk from the white. Add the grated cheese, egg yolk, and 2-3 tablespoons of breadcrumbs to the potato puree. Mix well with a fork.
Beat the egg white in a bowl. Form the potato balls. Take a small portion of the mixture and roll it between your hands. Prepare all the balls in the same way.
Dip them first in the egg white and then in the breadcrumbs, making sure it adheres well all around. Arrange them as you prepare them on a slightly oiled baking sheet or directly in the air fryer basket. Lightly oil the surface and let them cook at 365°F for 15-16 minutes.

The Balls can be stored in a container in the fridge for 2 days; you just need to reheat them for a few minutes in the oven or microwave.
For more flavorful balls, you can add cooked ham or speck cut into small pieces to the potatoes.
For a crunchier coating, you can use half breadcrumbs and half cornmeal.
