Ingredients for Oven-baked Potatoes

  • 1.1 lbs potatoes
  • 0.5 cups grated parmesan
  • 0.5 cups potato starch
  • to taste salt
  • 1.35 tbsp extra virgin olive oil
  • 2 tbsp herbs

How to make Potato Stars

  • First, prepare the potatoes. Peel, wash, and cut them into cubes. You can choose to cook the potatoes in boiling water for about 20-25 minutes. Or you can also choose to cook them in the microwave.

    Microwave cooking: place the potato cubes in a glass bowl, cover with microwave-safe film. Poke holes in the film with a knife blade and cook the potatoes at 750 W for 7-8 minutes.

  • With the help of a potato ricer, mash the potatoes into a puree.

  • Add a pinch of salt, grated parmesan, potato starch, and herbs.

  • Mix well with a fork and then transfer the mixture to a work surface dusted with potato starch.

  • Using a rolling pin, roll out the potato mixture to a thickness of about 0.2 inches. Now, use a star-shaped cutter to cut out many little stars. I used two cutters of different sizes.

  • Place the Potato Stars close to each other on a baking tray lined with parchment paper. Brush them with oil. If you prefer, you can also use an oil sprayer.

  • Bake the Potatoes in a preheated static oven at 375°F for 18-20 minutes.
