- 3/4 cup + 1 tbsp white wine

- 4.2 oz anchovies in oil

How to Prepare Puff Pastry Bites with Raisins and Anchovies
You can prepare the pastry by hand or with the help of a mixer. Pour the flour into a bowl, add a pinch of salt, the extra virgin olive oil, and gradually the white wine, starting to mix. Continue pouring the white wine while kneading until you get a soft but not sticky dough. Form a ball, wrap it in plastic wrap, and let it rest for 30 minutes
While the dough rests, let the raisins soften in a bowl with hot water. Roll out the dough into a very thin sheet; it’s better to use a pasta machine. You need to get thin sheets; I go up to the second last notch of the machine.
Cut squares of the size you prefer; I made them 3.15-3.54 inches. Place some drained raisins and the anchovy fillets in small pieces on one side. Roll to form a small roll. Prepare them all in the same way.
Place the sheets with raisins and anchovies slightly apart on a baking tray lined with parchment paper. Brush them with extra virgin olive oil. Bake the Puff Pastry Bites with Raisins in a preheated static oven at 375°F for 20-25 minutes.
