Ingredients for Puff Pastry Pie with Peppers
- 1 roll puff pastry (round)
- 1.75 lbs peppers (yellow and red)
- 1 cup ricotta
- 2.5 oz Grana Padano cheese, grated
- 6.5 oz scamorza cheese
- to taste extra virgin olive oil
- 1 pinch pepper
- to taste salt
How to Prepare Puff Pastry with Peppers and Ricotta
Wash the peppers, dry them, and oil them. Transfer them to the basket of the air fryer and let them cook at 390°F for about 20 minutes. With the air fryer, there’s no need to turn them, ensuring they cook well on all sides. But you can also cook them in the oven or simply on a grill.
When they are well charred on all sides, transfer the peppers to a paper bag or a plastic food bag. Let them cool, making it easy to peel them. Peel them and remove the seeds inside. Cut them into strips.
Mix the ricotta in a bowl with 1.5 oz of grated cheese, a pinch of pepper, and the scamorza cheese in small cubes. Roll out the puff pastry to line a 10-inch round baking pan lined with parchment paper. Prick the bottom with a fork.
Spread the ricotta cream on the bottom and arrange the roasted pepper strips on top. Salt the peppers and sprinkle over the remaining grated cheese. A drizzle of extra virgin olive oil and let the Savory Pie with Peppers cook in a preheated oven at 375°F in convection mode for about 30 minutes. If using a static oven, it may take 4-5 more minutes of cooking.
