Ingredients for the Savory Roll with Pumpkin

  • 1 roll puff pastry (rectangular)
  • 14 oz pumpkin
  • 5 oz speck
  • 8 oz scamorza cheese
  • 1 white onion (small)
  • as needed extra virgin olive oil
  • as needed salt
  • 1 pinch pepper
  • 3 tablespoons milk
  • 4 tablespoons mixed seeds

How to prepare the Puff Pastry Roll with Pumpkin and Speck

  • Cut the pumpkin into small cubes. Pour 2 tablespoons of extra virgin olive oil, the thinly sliced onion, and pumpkin into a pan. Add a pinch of salt and pepper and let it cook over medium heat for 10-12 minutes, stirring often with a wooden spoon.

  • At the end of cooking, simply mash the cooked pumpkin with a fork, it doesn’t matter if there are some pumpkin pieces left. Spread a rectangular puff pastry roll on the work surface. Distribute the pumpkin over the entire surface.

  • Add plenty of thinly sliced scamorza cheese and then plenty of thinly sliced speck. With the help of parchment paper, roll the puff pastry from the longer side. Seal the two ends. Transfer the roll to a baking sheet lined with parchment paper.

  • Brush with milk, sprinkle the surface with the mixed seeds and make 4-5 cuts on the surface. Bake the Savory Pie with Pumpkin and Speck in a static oven preheated to 375°F for 25-30 minutes.
