Ingredients for the Savory Tree with Ricotta and Spinach
- 1 roll puff pastry (rectangular)
- 10.5 oz ricotta
- 10.5 oz spinach, frozen
- 1.75 oz grated Parmesan
- 1/2 teaspoon nutmeg
- as needed salt
- 4 tablespoons milk (for brushing)
- 1 tablespoon sesame seeds (for decorating)
How to prepare the Savory Pie with Ricotta and Spinach
To prepare this savory pie, I used frozen spinach, but you can also use fresh spinach. Cook the still frozen spinach cubes in a saucepan over low heat with a lid. This way, you don’t need to add water; the water released as they thaw will be enough. It will take 5-6 minutes.
Chop the spinach simply on the cutting board with a knife, or if you prefer them smaller, you can use a mixer or an immersion blender. Mix the ricotta with the spinach in a bowl, a pinch of salt, grated Parmesan, and nutmeg.
Roll out the puff pastry on the work surface and divide it into 2 parts. Spread the ricotta and spinach mixture on one half of the puff pastry.
Using the parchment paper, fold the other half of the puff pastry over the filling. Press with your hands to make the two parts adhere. Now, with the help of a ruler, cut out a tree shape. Mark the top center and proceed with two oblique cuts without cutting through the bottom.
Now make cuts at the bottom to create the trunk of the tree. Reserve the cut-off pieces. Now make cuts on both sides to create the branches of the Puff pastry tree. I made 7 cuts on each side without reaching the center, thus obtaining 7 branches on each side.
Now make 2-3 twists on each branch. From the filled puff pastry scraps, you can cut out stars to decorate the Tree, placing one on top and the others in the middle. Brush it with milk and finally decorate it with sesame seeds.
Transfer the Savory Tree to a baking sheet lined with parchment paper and let it bake in the preheated static oven at 374°F for 22-24 minutes.

You can replace puff pastry with shortcrust pastry
If there’s any leftover, you can store it in the fridge in a container for 2 days or freeze it. Just heat it for a few minutes in the oven or microwave
If your air fryer is large enough, you can bake the savory pie in it
If you want to prepare a larger Puff pastry tree, just use 2 rectangular rolls of puff pastry and double the filling amounts. The procedure and cooking times remain the same
