Delicious puff pastries filled with custard and delightful blueberries. Ingredients for Blueberry Puff Pastries

  • 1 roll puff pastry (rectangular)
  • 1 1/4 cups blueberries
  • 1/4 cup sliced almonds
  • to taste powdered sugar (for decoration)
  • 2 egg yolks
  • 1/3 cup sugar
  • 4 tbsp potato starch
  • 1 3/4 cups whole milk
  • 1/2 lemon peel (untreated)

What you need to prepare the Puff Pastries with Blueberries

HOW TO PREPARE PUFF PASTRY AND BLUEBERRY SWEETS

  • Beat the egg yolks with the sugar until you get a light and frothy mixture. Add the potato starch and mix. Heat the milk in a saucepan with the untreated lemon peel, bringing it almost to a boil. Combine the whipped eggs with the milk. Let the cream thicken by stirring with a whisk for about a minute. Transfer the Cream to a bowl and let it cool.

  • Roll out the rectangular puff pastry on your work surface and cut it into more or less regular squares. I got 12 squares, but it depends on the size of the puff pastry you use.

  • With a knife, cut a frame into each puff pastry square, leaving 2 opposite corners intact. It will be very easy by observing the photos. Lift one flap and overlap it to the opposite side, and do the same with the opposite side of the puff pastry frame. Press around with your hands or with the prongs of a fork.

  • Arrange the Puff Pastry slightly apart on a baking sheet lined with parchment paper and prick the bottom with the prongs of a fork. Bake them in a preheated static oven at 375°F for 15-16 minutes. Let them cool.

  • Wash the blueberries and let them drain. Transfer the custard to a piping bag with a large star-shaped nozzle. Fill the puff pastries with the custard.

  • Place the blueberries on the cream, add the sliced almonds and finish with a generous sprinkle of powdered sugar.
