Pumpkin and chocolate donuts are super soft and delicious. This morning I woke up wanting to make some sweet donuts in a delightful autumn version with pumpkin in the dough. You should know that October in my kitchen rhymes with pumpkin. In fact, there is always a slice of pumpkin in my fridge that I use to make many recipes, both savory and sweet. So here is today my blended pumpkin added to the dough of super soft sweet pumpkin donuts that are easy to make without leavening and perfect for breakfast, for the snack of the little ones at home, but also for a super sweet treat. To bake my pumpkin donuts I used a silicone donut mold given to me by my brother. Soft and tender donuts with pumpkin in the dough that makes them super soft and with lots of dark chocolate chips that make them irresistible. Have I already convinced you to try them? Ingredients for Pumpkin Donuts
- 2 eggs
- 110 g sugar
- 3.4 tbsp vegetable oil
- 7.1 oz pumpkin (cleaned)
- 1.4 cups all-purpose flour
- 0.3 cups chocolate chips
- 1/2 packet baking powder (8 grams)
What You Need to Make Sweet Pumpkin Donuts
- Mixer
- Spatula
- Chopper
How to Make Pumpkin Donuts
For this recipe, you will need 200 grams (7.1 oz) of pumpkin cleaned from the skin, seeds, and fibers. Cut the pumpkin into small pieces and blend it in a mixer along with the vegetable oil. Beat the two whole eggs with sugar using an electric mixer for about 7-8 minutes until you have a light and fluffy mixture.
Add the pumpkin mixture and stir. Add the sifted flour and baking powder and mix. Finally, add the chocolate chips to the batter and simply mix with a spatula to incorporate them into the dough.
Oil the cavities of a silicone donut mold. Pour the batter into the molds, filling them 2/3 full. Bake the chocolate donuts in the preheated oven at 356°F (180°C) in static mode for 18-20 minutes.
Always do the toothpick test to check the internal cooking. Let them cool before gently removing them from the molds. Decorate as you like with some powdered sugar.
