Ingredients for Pumpkin Flower Fritters

  • 2 1/2 cups flour
  • 1 1/4 cups water
  • 1 tsp fresh yeast
  • 12 pumpkin flowers
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1 1/2 cups vegetable oil (for frying)

How to prepare Pumpkin Flower Fritters

  • Clean the pumpkin flowers. Remove the stem, detach the side growths at the base of the flower. Gently open the flower and remove the internal pistil. Rinse them gently under running water and then let them dry on a cloth. Cut them into pieces.

  • Dissolve the fresh yeast in lukewarm water. Gradually add the flour while continuing to stir simply with a fork. Also add the grated Parmesan, half a teaspoon of salt, and a tablespoon of extra virgin olive oil.

  • Finally, also add the pumpkin flowers and mix well. You should obtain a soft dough. Cover the bowl with plastic wrap and let the dough rise for at least 2 hours in a warm place.

  • Heat the vegetable oil in a small, deep pan. I check the oil temperature by dipping the handle of a wooden spoon; when it bubbles a lot around it, the temperature is right.

  • Using 2 spoons, plunge small portions of dough into the boiling vegetable oil. Let the fritters turn golden on all sides. Remove them with a slotted spoon and let them drain on kitchen paper.

The fritters are delicious to enjoy just fried. If there are any leftovers, store them for one day and heat them for a few minutes in the oven or microwave

These fritters are not suitable for baking or air frying
