Ingredients for Baked Fennel
- 2 fennel bulbs
- 6 tbsp breadcrumbs
- as needed extra virgin olive oil
- 1.5 oz grated Parmesan
- to taste salt
- to taste pepper
How to prepare the Quick Fennel Gratin
Clean the fennel by removing the outer leaves, the stalks and the tougher core. Rinse them under running water and slice them into thin slices.
Arrange the fennel slices in a single thin layer in an oiled baking dish. Season with salt. Add a pinch of pepper. Sprinkle with the breadcrumbs and the grated Parmesan. Finally, drizzle a little extra virgin olive oil over them.
Cover the baking dish with a sheet of aluminum foil or parchment paper. Bake the fennel in a preheated conventional oven at 374°F for 15 minutes. Remove the foil and continue baking for another 8–10 minutes. This way the fennel will cook through and become very tender.
