A winter vegetable that lends itself to the preparation of many recipes. Today I want to tell you how I prepared red cabbage with a recipe of Trentino origin. Red cabbage and apples for a light main course or a delicious side dish to accompany many meat dishes. Cabbage is a typical cold season vegetable rich in nutrients, antioxidants, fibers, anti-inflammatory substances, also rich in vitamins C and K. Low in calories and perfect even for those following a low-calorie diet, though it also depends on how it is cooked. Red cabbage is first marinated with vinegar and then cooked in a pan by adding sliced apples and a little sugar for a very pleasant sweet and sour note. Ingredients for Pan-cooked Red Cabbage

  • 1.76 lbs cabbage (red)
  • 2 Royal Gala apples
  • 0.42 cups white wine vinegar
  • 1 white onion (medium)
  • to taste extra virgin olive oil
  • 1 tbsp sugar
  • to taste salt

How to prepare Red Cabbage with Apples in a Pan

  • Clean the cabbage by removing 2-3 outer leaves. First, cut it in half and then into strips, removing the hardest core part. Transfer the vegetable to a colander and rinse it under running water. Let it drain and place it in a bowl. Season it with vinegar and mix with 2 tablespoons. Let it marinate for 30 minutes.

  • Meanwhile, prepare the apples. I prefer not to peel them, but if you want, you can peel them. Wash the apples, cut them in half, and then into thin slices, removing the central part with the seeds. Pour 3-4 tablespoons of extra virgin olive oil into a large pan, add the cleaned, thinly sliced onion, and the cabbage drained from the vinegar.

  • Season with salt and let it cook by covering the pan with a lid over low heat. Let it cook for 20 minutes, stirring often with a wooden spoon. If it dries too much, add a few tablespoons of water. After 20 minutes, add the apple slices and sugar. Stir and continue cooking for another 8-10 minutes.
