Today I want to tell you how I prepared a delicious Savory Pie with zucchini, extremely simple and quick to prepare. No pre-cooking is required, just assemble all the ingredients and then straight into the oven. The result is a tasty, thin, Savory Pie that’s crispy and flavorful. For the filling, I used cooked ham and provola cheese slices in addition to the zucchinis, but if you prefer, you can replace the cooked ham with speck or salami and the provola with scamorza, smoked provola, or another soft and melting cheese. Ingredients for Zucchini and Ham Savory Pie
- 1 sheet puff pastry (round)
- 1 lb 1 oz zucchini
- 7 oz provola cheese
- 4 oz cooked ham
- to taste extra virgin olive oil
- 2 oz grated Parmesan cheese
- to taste salt
How to Prepare Rustic Pie with Zucchini
Wash the zucchinis, trim the ends, and cut them into very thin slices. You can do this simply with a knife or using a mandoline.
Line a 11-inch round baking pan with puff pastry lined with parchment paper. Prick the bottom with the tines of a fork. Distribute the slices of cooked ham.
Lay the provola slices over the ham, distributing them more or less evenly. Now arrange the zucchini slices in concentric circles starting from the outer edge.
Overlap the zucchini slices slightly. Salt the zucchinis. Drizzle a little extra virgin olive oil over the surface and sprinkle with grated Parmesan cheese.
Fold the puff pastry around the edges to form an outer border. Bake the Puff Pastry Pie with Zucchini in a preheated oven at 375°F in static mode for 28-30 minutes. Enjoy it hot or warm.

Loredana’s Tips
If any Savory Pie is left over, store it in the fridge in a container or you can also freeze it. Just reheat it for a few minutes in a hot oven or microwave.
If you prefer, you can replace the puff pastry with shortcrust pastry.
It is not necessary to pre-cook the zucchinis as they will cook directly in the oven.
