The recipe I want to tell you today has a puff pastry base and a completely vegetarian filling with peppers and potatoes, and the addition of cubed scamorza cheese makes it truly irresistible. A rustic pie that I rolled up to form a Puff pastry roll with peppers and potatoes, tasty and flavorful, perfect for dinner but also for lunch or for the unexpected arrival of guests. The peppers are starting to appear at the market stalls even though it’s not really their season, but thanks to the warm weather of this spring disguised as summer, they have arrived early. Ingredients of the Rustic Roll with Potatoes and Peppers
- 1 roll puff pastry (rectangular)
- 24.7 oz peppers
- 17.6 oz potatoes
- 8.8 oz scamorza cheese
- 4 tbsps milk
- 2 tbsps sesame seeds (for decoration)
- to taste salt
How to Prepare the Puff Pastry Roll with Peppers
To prepare the peppers, wash them. Dry them and coat with olive oil. Grill them: you can do this in the oven, on a grill, or in an air fryer. Let them grill well on all sides, then transfer them to a food bag or paper bag to cool. This will make them easier to clean later.
Peel the potatoes, wash them, and cut them into cubes. Cook the potatoes in salted boiling water for about 20-25 minutes. Test the doneness by piercing them with a fork. Drain and let cool. Clean the peppers: peel them, remove the seeds and inner filaments. Cut them into strips.
Roll out the rectangular puff pastry roll on the work surface directly on parchment paper. Cover with the grilled peppers and lightly salt. Add the boiled potato cubes and finish with scamorza cheese cut into slices or cubes.
Now using the parchment paper, gently roll up the puff pastry enclosing the filling to form a stuffed puff pastry roll. Roll from the shorter side of the puff pastry. Seal the ends well.
Transfer the Puff Pastry Roll with Peppers and Potatoes to a baking sheet lined with parchment paper. Brush with milk and decorate with sesame seeds. Make diagonal cuts on the surface. Bake the Rustic Roll in a preheated oven at 374°F (190°C) for 30-35 minutes.

If there is leftover Savory Pie, keep it in a container in the refrigerator for one day. You just need to reheat it for a few minutes in the oven or microwave to make it as fresh as just baked.
If you like, you can replace the white scamorza cheese with smoked scamorza.
