Ingredients for the Parmesan Savory Pie
- 1 roll puff pastry (round)
- 2 eggplants (about 1.1 lbs)
- 250 g cherry tomatoes
- 250 g mozzarella
- 1/3 cup grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt
- 1 sprig basil
How to prepare the Puff Pastry Pie with Eggplants
Wash the eggplants, remove the stem, and cut them into thin slices. I don’t peel the eggplants first, but you can if you prefer. Grill the eggplants on a hot grill.
Wash the cherry tomatoes and cut them into thin slices. Also cut the mozzarella into slices. Cover a 11-inch diameter pan lined with baking paper with a roll of puff pastry.
Poke the bottom with a fork. Cover the bottom with a layer of grilled eggplants, slightly overlapping them.
Place many slices of cherry tomatoes on top. Salt. Place many slices of mozzarella on top.
Cover with the other grilled eggplants. A bit of salt and more slices of mozzarella and cherry tomatoes.
Plenty of grated Parmesan cheese and a drizzle of extra virgin olive oil. Fold the puff pastry all around.
Bake the Savory Pie with Eggplants in a static hot oven at 375°F for 30 minutes. Decorate with a few fresh basil leaves.
