SAVORY PIE WITH FILLO DOUGH with a Ricotta and Spinach Filling

Savory pie with fillo dough is delicious and flavorful. Fillo dough has been a fairly recent discovery for me, partly thanks to a Turkish series I follow where many Borek are baked every day. The name of this dish comes from the Turkish name bur- “to roll” which can describe any dish made from rolled dough. The main ingredient of börek is the yufka, a very thin puff pastry sheet. For practicality, I prefer to use fillo dough, a very thin dough that can excellently replace it. In my package, I found 7 extremely thin sheets of dough. For the filling of my savory pie, I used ricotta and spinach, a classic that everyone always loves. The dough becomes crispy and crackly when baked, simply irresistible. Ingredients for the Rustic Ricotta and Spinach Pie

  • 4 sheets fillo dough
  • 14 oz ricotta
  • 10.5 oz spinach, frozen
  • 1.75 oz grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 0.5 cup water
  • 1/2 tsp nutmeg
  • to taste salt

How to Prepare Savory Pie with Fillo Dough

  • First, cook the frozen spinach in a saucepan with very little water over low heat and covered with a lid. It will take 6-7 minutes. Alternatively, you can cook the spinach in the microwave.

  • Drain the spinach well, possibly squeezing them. You can then chop them simply on a cutting board with a knife, or if you prefer them finer, you can chop them in a food processor or immersion blender.

  • Mix the ricotta with the chopped spinach, a pinch of salt, nutmeg, and grated Parmesan cheese in a bowl. Mix well until you have a soft cream of ricotta and spinach.

  • Oil or line a 9.5-inch diameter baking dish with parchment paper. Mix the water with the olive oil in a bowl. Spread the fillo dough sheets on the work surface and brush them with the water and oil.

  • Place the sheets in the baking dish, letting them overhang and arranging them slightly staggered. Pour the filling inside, distributing it with a spatula. Fold the fillo dough, one sheet at a time, over the filling.

  • Brush with the water and oil. Bake the Rustic Pie with Fillo Dough in the preheated static oven at 375°F for 25-30 minutes.

Loredana’s Tips

If there’s leftover Savory Pie, store it in a container in the fridge for one day. You just need to reheat it for a few minutes in the hot oven or microwave to make it crispy and crumbly like freshly baked

For a tastier and more flavorful filling, you can replace grated Parmesan with Pecorino cheese and/or add diced scamorza or speck
