Savory pie with peppers simple to prepare and so delicious. Before diving fully into more typically autumn recipes and season-specific vegetables, I still like to use peppers, zucchinis, and eggplants in my kitchen. Today I prepared a simple and exquisite savory pie with peppers that’s great to look at and delicious to eat. Few and simple ingredients for a recipe that immediately won over my small family. A roll of ready-made puff pastry that’s a staple in my fridge and often saves dinner, a ricotta cream, and sweet peppers. A light and crisp base, and I simply roasted the peppers in an air fryer and arranged them on my savory pie with a beautiful swirl effect. For a visual effect, I preferred to use both yellow and red peppers, but if you prefer, a single color will do just fine. Ingredients for the Pie with Peppers
- 1 roll puff pastry (round)
- 1.54 lbs peppers
- 1/2 cup grated Parmesan cheese
- 10.58 oz ricotta
- to taste salt
- to taste pepper
- 1.35 tbsp extra virgin olive oil
- Few leaves basil
How to Prepare the Savory Pie with Peppers
First, prepare the peppers. Wash them, dry them, and oil them lightly. I roasted them in an air fryer, but if you prefer, you can also do it on a grill or in the oven. Let them cool in a paper or food bag and then clean them by peeling and removing the seeds and internal filaments.
Cut the peppers into strips. In a bowl, mix the ricotta with a pinch of salt, grated Parmesan, and some pepper. Roll out a round puff pastry sheet inside a baking tin lined with parchment paper.
Prick the bottom with the tines of a fork. Spread the ricotta cream on the puff pastry base with a spatula. Starting from the outside, make concentric circles with the pepper strips, alternating red and yellow peppers.
You need to cover the entire surface of the savory pie this way. Salt the surface and add a drizzle of extra virgin olive oil. Fold the puff pastry around the edges to form a border.
Bake the Rustic Pie with Peppers and Ricotta in a preheated static oven at 375°F for 30-35 minutes. Let it cool and garnish as desired with basil or mint leaves.
