Ingredients for the Rustic Pie with Pumpkin
- 1 puff pastry (round)
- 1.1 lbs pumpkin (cleaned)
- 9 oz stracchino
- to taste extra virgin olive oil
- 1.4 oz grated Parmesan cheese
- to taste salt
- 1 pinch pepper
- 1 sprig rosemary
How to Prepare the Savory Pie with Pumpkin and Stracchino
Clean the pumpkin by removing the skin, seeds, and inner filaments. Slice it very thinly, so it won’t require pre-cooking. You can do this simply with a knife or a mandoline. Spread a roll of round puff pastry in a 10-11 inch diameter pan. Poke the bottom with the tines of a fork.
Arrange the pumpkin slices on the puff pastry slightly overlapping them. A pinch of salt and many stracchino dollops. Continue in this way until you have used all the pumpkin slices.
Finish with many stracchino dollops, a pinch of pepper, the grated Parmesan cheese, a few rosemary sprigs, and a drizzle of EVO oil. Fold the puff pastry all around. Bake the Puff Pastry Pie with Pumpkin and Stracchino in a preheated oven at 375°F in static mode for 28-30 minutes
