SAVORY ZUCCHINI LOAF a soft and flavorful savory cake

Savory zucchini loaf soft and delicious. The recipe I want to share with you today stars once again my beloved zucchinis. A Savory Cake with zucchinis in a simple and exquisite version. I made a very simple batter in a bowl by mixing all the ingredients and without pre-cooking the zucchinis, you just need to cut them into small cubes and add them to the batter. I used a loaf pan for baking, but if you prefer, a round pan of 9-10 inches (22-24 cm) in diameter works just as well. A simple, tasty, and flavorful Savory Cake with zucchinis and speck. The perfect, simple recipe for a quick meal, a special appetizer, or simply when you don’t know what to prepare for lunch or dinner. For the ingredients, I chose diced scamorza cheese and speck, but you can adjust to your taste by choosing a soft cheese and you can replace the speck with cooked ham. Ingredients for the Savory Cake with zucchinis

  • 14 oz zucchinis
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 5 oz scamorza cheese
  • 2.8 oz speck
  • 1 1/4 cup flour
  • 1/2 packet instant yeast for savory preparations (8 grams)
  • to taste salt

How to prepare the Savory Zucchini Loaf

  • Wash the zucchinis. Trim the ends and cut them first into thick slices and then into small cubes.

  • Pour the egg into a bowl. Add a pinch of salt, the milk, and the olive oil. Simply mix with a fork

  • Add the Parmesan cheese, sifted flour, and instant yeast for savory cakes. Mix

  • Add the zucchini cubes, the scamorza cheese in small cubes

  • Add the speck cut into strips and mix.

  • Pour the batter into an oiled loaf pan. My pan measures 8.3 x 4.3 inches (21 x 11 cm)

  • Bake the Savory Zucchini Loaf in a preheated static oven at 375°F (190°C) for 28-30 minutes. Always do the toothpick test to check the internal cooking.
