Savoy cabbage and carrot salad simple and delicious. It’s a salad prepared with raw savoy cabbage cut very thin, carrots cut into thin strips and lightly dressed. Raw savoy cabbage is crunchy, fresh and delicately sweet, very different from cooked cabbage. I confess that I like it a lot both cooked and raw, in fact you’ll always find many Recipes with cabbage on my Blog. Impossible to resist some delicious Cabbage Rolls or a super-creamy Pasta with cabbage, potatoes and provola that stretches wonderfully. Savoy cabbage is a true ally of health: rich in vitamin C and vitamin K, it contains fiber which aids digestion, has cleansing and antioxidant properties, is low in calories yet very filling. Consumed raw, as in this recipe, it preserves its nutritional properties to the maximum. For the dressing I used lemon juice, oil, salt and plain yogurt. I confess that, after some hesitation, at home it was loved very much and I’m sure it will be a must this winter, maybe adding some other vegetables. Crunchy, fresh and surprisingly delicate. Thinly sliced savoy cabbage, dressed raw to enhance its flavor and all its properties. A simple, seasonal dish that smells of genuine cooking and wellbeing. Ingredients for the Savoy Cabbage and Carrot Salad

  • 7 cups savoy cabbage
  • 1 2/3 cups carrots
  • 1 lemon
  • 1 container plain yogurt (125 g (about 1/2 cup))
  • 2 tbsp extra virgin olive oil
  • to taste salt
  • 1 pinch pepper

How to prepare the Savoy Cabbage and Carrot Salad

  • Clean the savoy cabbage by removing the outer leaves. Using a mandoline, slice the cabbage into very thin strips. If you prefer, you can also do this by hand with a knife and cutting board. Transfer the cabbage to a colander and wash it under running water. Let it drain well.

  • Put the cabbage in a bowl. Add one teaspoon of salt and the juice of one lemon. Mix well with 2 tablespoons. Cover the bowl with plastic wrap and let it rest for one hour.

    * Resting is important because the cabbage softens, becomes more digestible, absorbs the dressing better and the flavor becomes more balanced.

  • Meanwhile, peel the carrots and, again using the mandoline, cut them into thin strips. After the resting time, add the carrots to the bowl with the cabbage. Dress with one container of plain yogurt, 4-5 tablespoons of extra virgin olive oil and a pinch of pepper. Mix well with 2 tablespoons. Let it rest a few minutes before serving.

Loredana’s Tips

The Savoy Cabbage Salad is very versatile and lends itself to many variations. You can replace the lemon juice with 3-4 tablespoons of wine vinegar.

You can add walnut halves, almonds, sliced or diced apples or pears for a fresh note, cubes of cheeses such as feta, Grana Padano or Asiago, or sesame, pumpkin or sunflower seeds.

You can replace the plain yogurt with Greek yogurt and savoy cabbage with green cabbage (cabbage head).
