SHORTBREAD STARS with Raspberry Jam

Delicious and delightful shortbread stars with jam. It’s not Christmas without baking Cookies, in fact, it should be mandatory for me! So let’s make lots of COOKIE RECIPES of all kinds and to suit all tastes. Today I want to tell you how I prepared some delightful star-shaped cookies with jam. Two soft shortbread stars joined by a teaspoon of jam. I used raspberry jam, but another flavor is perfectly fine. Ingredients for the Jam Cookies

  • 1 egg
  • 1 egg yolk
  • 90 g sugar
  • 80 g butter
  • 280 g flour
  • 1/2 tablespoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 180 g raspberry jam
  • to taste powdered sugar (for decoration)

How to Prepare Shortbread Stars

  • You can prepare the shortbread simply in a bowl or with the help of a mixer. Mix the butter in small pieces with the flour and sugar. Add the cinnamon, baking powder, one whole egg, and one yolk.

  • Knead well quickly until you get a soft and non-sticky dough, add a little more flour if needed. Form a loaf, wrap it in film. Let the shortbread dough firm up in the fridge for at least 30 minutes.

  • To prepare the cookies you need 2-star cutters, one larger and one smaller. Roll out the shortbread on the lightly floured work surface to a thickness of 1/8 inch. Use the larger star cutter to cut out many stars. With the small star cutter, cut out the center of half of the stars.

  • In this way, you will have whole stars and stars with a window always in the shape of a star. Re-roll the scraps to make more cookies. Place the cookies slightly spaced apart on a baking sheet lined with parchment paper. Bake the Sweet Shortbread Stars in the preheated oven at 340°F in static mode for 12-14 minutes. Do not let them darken too much.

  • Let the cookies cool. Place a teaspoon of raspberry jam in the center of a whole star and cover with the star with the window. Prepare all the Christmas Cookies in the same way. Dust with powdered sugar if desired.
