Ingredients for the Soft Apple Cake

  • 2 eggs
  • 1/2 cup sugar
  • 4 cups apples
  • 3.5 tbsp butter
  • 1/2 cup milk
  • 1 1/3 cups flour
  • 1/2 cup raisins
  • 1/3 cup sliced almonds
  • 1/2 packet baking powder (8 grams)
  • 1/2 tsp ground cinnamon
  • as needed icing sugar

How to prepare the Soft Apple Cake with Raisins

  • Peel the apples, I used 3. Clean them and cut half into small cubes and the rest into thin slices. Soften the raisins in a small bowl with hot water. Beat the 2 whole eggs with the sugar in a bowl.

  • Add the melted butter and milk. Mix.

  • Continue preparing the cake by adding the sifted flour, cinnamon, and baking powder. Mix.

  • Add the diced apples and drained raisins last, and mix with a spatula to incorporate them into the batter.

  • Pour the batter into a rectangular baking pan, mine measures 8×11 inches, greased or lined with parchment paper. Level the surface with the spatula. Place the apple slices on the surface, letting them sink slightly into the batter. Finish with the sliced almonds.

  • Bake the Soft Apple and Raisin Cake in a preheated static oven at 350°F for 35-40 minutes. Always perform the toothpick test to check the cake’s doneness inside. Let it cool before unmolding it onto a serving plate and decorate as desired with icing sugar.

If you prefer, you can substitute the butter with 3.5 tbsp of vegetable oil or light olive oil
