Soft apple cake with raisins — the dessert that fills the house with a comforting, delicious aroma. Among the many desserts I prepare, I always prefer the simple, genuine sweet treats that smell like the good things from the past. The apple cake that most of all brings back those traditional scents and flavors is always the Apple Cake. My grandmother only made 2–3 desserts, and one of them that always held an honored place was the Grandma’s Apple Cake. Ingredients for the Apple Cake
- 2 eggs
- 1/2 + 1 tbsp cup granulated sugar
- 3 1/2 tbsp butter
- 1/2 cup milk
- 1 1/2 cups all-purpose flour
- 1/2 cup raisins
- 3 medium apples
- 1 tsp ground cinnamon
- 3/4 tsp baking powder (about 4 g (half a sachet; full sachet = 8 g))
- as needed powdered sugar
What you need to prepare the Apple Cake

How to prepare the soft apple cake with raisins
Peel the apples, core them and cut half into small cubes and the other half into thin slices. Soak the raisins in a bowl of warm water to soften. Beat the 2 eggs with the sugar for 6–7 minutes using an electric mixer until the mixture is pale and foamy.
Add the melted butter and milk and mix. Continue by adding the sifted flour, baking powder and ground cinnamon. Mix well. Finally fold in the diced apples and the drained raisins.
Gently fold with a spatula to incorporate them into the batter. Line a rectangular 8 2/3 x 11 in (22 x 28 cm) pan with parchment paper. Pour the batter into the pan and level it with a spatula. Arrange the apple slices on the surface, pressing them slightly into the batter.
Bake the apple and raisin cake in a preheated conventional oven at 356°F for 35–40 minutes. Always do the toothpick test to check that the cake is cooked through. Let the cake cool before transferring it to a serving plate and decorate as desired with powdered sugar.

The apple cake stays soft stored in a container for 2–3 days.
If you prefer, you can replace the butter with 50 ml of vegetable oil or light olive oil (about 3 1/2 tbsp).
You can replace the milk with one small pot of plain yogurt, a plant-based drink, or 120 ml (1/2 cup) of orange juice.
