A coffee bundt cake made with moka coffee, but you can use espresso or even instant coffee. The boost from coffee is just what you need to start your day with energy, and if you don’t want too much caffeine, you can replace it with decaf coffee. Ingredients for the Coffee Bundt Cake
- 2 eggs
- 1/2 cup g sugar
- 2 coffee cups coffee
- 1/4 cup g butter
- 1/4 cup ml milk
- 3/4 cup g all-purpose flour
- 2/3 cup g spelt flour
- 1/2 packet baking powder (8 grams)
- 1 tsp ground cinnamon
- as needed powdered sugar (for decoration)
What you need to make the Coffee Cake
- Mixer
- Bundt Cake Pan
How to prepare the Soft Coffee Cake
Beat the 2 whole eggs with sugar using an electric mixer for 6-7 minutes until you have a light and fluffy mixture.
Add the melted butter and 2 coffee cups, about 60 ml of coffee.
Add the milk as well and mix.
Now add the sifted white flour and spelt flour.
Add the cinnamon and baking powder. Mix
Pour the batter into a greased bundt cake pan of 9-10 inches in diameter. Bake the Soft Coffee Cake in a preheated static oven at 350°F for 35-40 minutes. Always do the “toothpick test” to check doneness inside the cake.
Let the Coffee Bundt Cake cool before transferring it to a serving plate and decorate it as you like with some powdered sugar.

The Cake stays soft and tender for 2-3 days in a container or under a food dome
I think cinnamon goes perfectly in this cake, but if you don’t like the flavor, you can simply omit it
