Ingredients for Mandarin Cookies
- 1 egg
- 1/2 cup sugar
- 3 mandarins (untreated)
- 6 tbsp butter
- 2 cups flour
- 1/2 packet baking powder
- 1/3 cup powdered sugar
- 1/4 cup sugar
How to Prepare Mandarin Cookies
For the cookies, you’ll need untreated mandarins to use the zest as well. Wash them thoroughly. Grate the zest and squeeze them to extract the juice, then strain it.
Let the butter soften in small pieces. Combine it in a bowl with the sugar. Mix with a fork until you have a soft mixture. Add the egg, mandarin juice, and zest. You need about 70-80 ml (around 1/3 cup) of mandarin juice.
Mix and gradually add the sifted flour and baking powder. Mix well. If the dough is too soft, add 2-3 tablespoons of flour. Cover the bowl with plastic wrap and let it rest in the fridge for 30 minutes.
Retrieve the dough from the fridge and form walnut-sized balls. Roll them first in granulated sugar, then in powdered sugar. Arrange the cookies slightly apart on a baking sheet lined with parchment paper.
Bake the cookies in a preheated oven for about 12-14 minutes, until they turn golden and form small cracks on the surface. Right out of the oven, they are too soft, so let them cool completely before transferring them to a tray.
