I baked the spinach balls in the oven, but you can fry them, cook them in a pan with a little extra virgin olive oil, or even cook them in an air fryer. In every way, they will be delicious. Ingredients for Spinach and Potato Balls
- 14 oz potatoes
- 5 oz frozen spinach
- 1/2 cup breadcrumbs
- 1.4 oz grated Parmesan cheese
- 1 egg (small)
- to taste salt
- 1 pinch nutmeg
- to taste extra virgin olive oil
How to prepare Spinach and Potato Balls
Peel the potatoes. Wash them and cut them into cubes. Let the potatoes cook in boiling water for 20-25 minutes. Test the cooking by piercing them with the tines of a fork. Drain and let them cool.
While the potatoes are cooking, also cook the spinach. I used frozen spinach that I cooked in the microwave in a bowl at 750 watts for 6-7 minutes, so it will not be necessary to add water.
Chop the spinach on a cutting board with a knife. Use a potato masher to mash the potatoes into a puree in a bowl. Add the spinach, a pinch of salt, a pinch of nutmeg that goes perfectly with spinach, and an egg. Mix well with a fork.
Add 3-4 tablespoons of breadcrumbs to solidify the mixture. With slightly oiled hands, prepare the meatballs. Take a small portion of the mixture and roll it between your hands to form a meatball. Roll it in breadcrumbs.
Prepare all the meatballs in the same way and arrange them side by side on a baking tray lined with parchment paper. Oil the surface and let them cook in the oven at 375°F for 16-18 minutes.
