How to Prepare Spring Cookies
You can prepare the dough either by hand or with a mixer. Pour the flour, baking powder, sugar, and butter into small pieces into a bowl. Mix and also add an egg and the yogurt.
Knead well. Transfer the dough to a lightly floured work surface and knead to form a smooth and soft dough, adding a little more flour if needed. Wrap it in plastic wrap and let it rest in the fridge for 30 minutes.
Roll out the shortcrust pastry on a lightly floured surface to a thickness of 1/8 to 1/6 inch. Cut out several rounds with a 1.5 to 2-inch round cutter.
Use another small flower-shaped cutter to cut out small flower shapes to decorate the cookies. Spread a teaspoon of jam on each round and place the flowers on top.
Arrange the prepared cookies slightly apart on a baking sheet lined with parchment paper. Bake the Cookies in a preheated static oven at 350°F for about 18-20 minutes. Let them cool and dust with powdered sugar if desired.
