STUFFED FRITTATAS WITH TOMATO for a main course everyone will love

Stuffed frittatas with tomato tasty and gooey. When I don’t know what to prepare for dinner, eggs are always the right answer. In the form of a frittata, omelette, or simply sunny-side-up eggs, they are always perfect to prepare and win over everyone at the table. The recipe I want to tell you about today is of soft and delicious thin frittatas that I first cooked and then filled with cooked ham and mozzarella and immersed in a simple tomato sauce. Preparing this recipe brought back many memories, in fact, eggs prepared this way were my dad’s favorite, who always asked my mother to prepare them, especially for dinner. A similar Neapolitan-origin recipe is Filoscio, a soft frittata filled with scamorza, provolone, or mozzarella. I wanted to dip the mozzarella frittatas in tomato sauce, and I assure you they are truly special. The only thing to remember is to provide plenty of bread slices for a good mop-up. Ingredients for Frittatas with Tomato and Mozzarella

  • 4 eggs
  • 1/2 cup milk
  • to taste salt
  • to taste extra virgin olive oil (to grease the pan)
  • 5.6 oz mozzarella
  • 4 slices cooked ham
  • 7 oz tomato puree
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic
  • to taste salt

How to Prepare Tomato Frittatas

  • Prepare a tomato sauce. Pour olive oil and a garlic clove into a saucepan. Let it sauté lightly and add the tomato puree. Adjust the salt and let it cook for 7-8 minutes. Remove the garlic clove at the end of cooking.

  • Crack the eggs into a bowl and add a pinch of salt and the milk. Beat well with a fork until the eggs are fluffy and frothy. Heat an oiled pan of 8.75 inches in diameter. Pour 1/4 of the egg mixture into it.

  • Cover the pan with a lid and let it cook on low heat for 1-2 minutes. Remove the lid and place a slice of cooked ham and 2-3 slices of mozzarella on the eggs. Using a spatula, fold the frittata in half.

  • Slide the frittata onto a plate. Prepare 3 more frittatas in the same way. Once you have finished the preparation, transfer the stuffed frittatas back to the pan and pour the sauce you prepared over them. Cover with a lid and let them cook for 3-4 minutes on low heat.

You can vary the filling by replacing the mozzarella with white or smoked scamorza or other soft cheese, and the cooked ham with mortadella or speck

If any frittatas are left over, store them in a container in the fridge. You can warm them for a few minutes in a pan or choose to gratin them in the oven by adding grated cheese on top
