Ingredients for Stuffed Artichokes
- 4 artichokes
- 1 1/4 cups breadcrumbs (of bread)
- 1/2 cup grated Parmesan cheese
- 2 tbsp capers
- 1 bunch parsley
- 2 cloves garlic
- as needed extra virgin olive oil
- as needed salt
- 1 pinch pepper
- 1/4 cup white wine
How to Prepare Artichokes in a Pan
First, clean the artichokes. Remove the stem, outer leaves, and tips. As you clean them, soak them in a bowl full of water to which you have added the juice of half a lemon or 2-3 tablespoons of vinegar to prevent them from browning.
Prepare the filling. Crumble the breadcrumbs in a bowl. Add a finely chopped clove of garlic, capers, chopped parsley, a pinch of salt and pepper. Also, add 3 tablespoons of extra virgin olive oil and 1/3 cup of grated Parmesan cheese and mix.
Drain the artichokes. Gently open them in the center with your hands to create a cavity to be filled later with the stuffing. Salt the artichokes inside. Divide the filling among the artichokes, using a spoon to press and compact it.
Pour 2 tablespoons of extra virgin olive oil and a clove of garlic in a suitable pot to hold the artichokes upright. Add the artichokes standing next to each other. Let cook for 2-3 minutes over medium heat. Pour the white wine and 1/4 cup of water into the pot sideways. Cover with a lid and let the artichokes cook over medium heat for about 35-40 minutes.
In theory, the Stuffed Artichokes are already ready like this, but to make them irresistible, transfer them to an oven-safe dish. Sprinkle them with grated Parmesan cheese and a drizzle of extra virgin olive oil, and then let them gratinate in the oven or air fryer at 392°F (200°C) for 6-7 minutes.
