Ingredients for the Savory Potato Pie
- 1.1 lbs potatoes
- 1 egg
- 0.5 cups grated Parmesan cheese
- 0.25 cups breadcrumbs
- 7 oz scamorza cheese
- 4.2 oz cooked ham
- to taste extra virgin olive oil
- to taste salt
What You Need
- Potato Masher
How to Prepare the Stuffed Potato Cake
Peel the potatoes. Wash them and cut them into pieces. Cook the potatoes in boiling water for 20-25 minutes. Check the doneness of the potatoes by piercing them with a fork.
Reduce the boiled potatoes to a puree with the help of a potato masher in a bowl.
Add a pinch of salt, grated Parmesan cheese, and an egg.
Add the breadcrumbs and mix well.
Pour half of the mixture into a 9.5-inch oiled or parchment-lined pan. Spread it on the bottom in an even layer with a spatula or the back of a spoon.
Cover with slices of cooked ham and slices of scamorza cheese or another soft, melting cheese.
Spread the remaining potato mixture on top and smooth it out in an even layer with a spatula.
A drizzle of oil on top and bake the Potato Cake in a preheated static oven at 375°F for 25 minutes

If there are any leftover slices of potato cake, store them in a container in the fridge for 1-2 days. You just need to heat them for a few minutes in the oven.
If you prefer, you can replace cooked ham with speck or mortadella and scamorza with another soft and melting cheese.
