Sweet and sour pumpkin in a pan perfect for a delicious side dish. The recipe I want to tell you about today features my beloved pumpkin, which I used to prepare a delicious side dish. Ingredients for Pumpkin in a Pan

  • 14 oz pumpkin
  • 1 onion (medium)
  • 4 tsps extra virgin olive oil
  • 3 tbsps vinegar
  • 2 oz black olives (pitted)
  • 1 oz raisins
  • 3 tbsps sugar
  • 1 tsp oregano
  • as needed salt

How to prepare Sweet and Sour Pumpkin in a Pan

  • Clean the pumpkin by removing the rind, seeds, and inner filaments. Cut the pumpkin into not too small cubes. Peel the onion and cut it into thin slices. Pour 3-4 tablespoons of oil into a pan.

  • Add the onion, pumpkin, and a pinch of salt. Let the pumpkin cook over medium heat for 12-14 minutes, stirring often with a wooden spoon.

  • If it dries too much, add 2-3 tablespoons of water. When the pumpkin is almost cooked, pour in the white vinegar, sugar, sliced black olives, and raisins.

  • Add the oregano as well. Stir and let it cook for another 3-4 minutes, stirring often with the wooden spoon. Let it cool slightly and serve.

For a more intense flavor, you can add 3-4 anchovy fillets in oil, cut into small pieces, to the seasoning

The Sweet and Sour Pumpkin is good to taste hot, warm, but even cold has its charm!

If there is leftover pumpkin, store it in the fridge in a container for 1-2 days. You will just need to heat it for a few minutes in a pan or microwave

    Sure, you can simply omit it or replace it with a clove of garlic
