TAGLIATELLE WITH MUSHROOMS AND HAM a first course that wins you over at the first forkful

Creamy and exquisite tagliatelle with mushrooms and cooked ham. The recipe I want to tell you today is of a very simple and delicious first course to prepare. I found some delicious cardoncelli mushrooms at the market and immediately thought of how to use them to prepare a special first course. I used egg tagliatelle, but if you prefer, another type of pasta, either fresh or dry, will do just fine. You can also choose another type of mushrooms, mixed mushrooms, or even frozen ones. I then added some cubes of cooked ham and fresh creamy cheese which I prefer over cooking cream. The only difficulty of this dish, if we want to call it that, lies in cleaning and cooking the mushrooms, but you can also do it in advance. I recommend you also try my Stuffed mushrooms. Ingredients for Pasta with mushrooms

  • 9 oz egg tagliatelle
  • 1 lb cardoncelli mushrooms (or another type)
  • 3.5 oz cooked ham
  • 5.5 oz spreadable fresh cheese (like Philadelphia)
  • 1.5 oz grated parmesan
  • to taste extra virgin olive oil
  • 1 clove garlic
  • to taste salt
  • 1 pinch pepper

How to prepare Tagliatelle with mushrooms

  • Clean the mushrooms: remove the earthy part, wash them quickly under running water or simply rub them with kitchen paper. Cut the mushrooms into not too small pieces. Pour 3 tablespoons of extra virgin olive oil, a clove of garlic, and the mushrooms into a pan. Let them cook over medium heat, stirring often with a wooden spoon. It will take about 10-12 minutes to cook the mushrooms; at the end of cooking, adjust the salt and remove the garlic clove.

  • Cut the ham into cubes and add it to the pan with the mushrooms. Mix well over medium heat to let it absorb the flavors. Add the grated parmesan and the creamy cheese to the pan. Mix well and turn off the heat. Cook the tagliatelle in plenty of salted water and drain them al dente, keeping a few tablespoons of the cooking water aside.

  • Toss the tagliatelle directly into the pan with the dressing and mix well over medium heat; if necessary, add a little of the cooking water. Serve the Tagliatelle with mushrooms and ham with a sprinkle of grated parmesan and, if you like, a pinch of pepper. Simple, quick, but above all delicious!
