Tasty and flavorful savory potato and zucchini pie. How much do I love savory pies? Always different and always special, just like the recipe I want to tell you about today. A base of flaky puff pastry and a filling of zucchini, cheese, and potatoes. It is prepared in a few minutes, the longest part will just be grilling the thin zucchini slices and the result is truly special. A tasty, crispy, and very, very good savory pie! I just have to tell you that at my house it disappeared in just a few minutes, thin and too good. I used a roll of rectangular puff pastry to prepare my savory pie, but if you prefer, round puff pastry or even shortcrust pastry will work just fine. So, have I convinced you to try it yet? Ingredients for the Zucchini and Potato Pie
- 1 roll puff pastry (rectangular)
- 1.1 lbs zucchini
- 1.1 lbs potatoes
- 8.8 oz scamorza cheese (sliced)
- 1.8 oz grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- to taste salt
- 1 sprig rosemary
What You Need to Prepare the Savory Zucchini Pie
- Peeler
- Baking Pan
- Grill Pan
HOW TO MAKE THE SAVORY POTATO AND ZUCCHINI PIE
Wash the zucchini, trim the ends, and use a peeler to cut them into very thin slices lengthwise. Grill the zucchini slices on a grill pan. Peel the potatoes, wash them, and slice them very thinly.
Place the rectangular puff pastry roll in a baking pan lined with parchment paper. My baking pan measures 8.6 x 11 inches. Prick the bottom with a fork. Arrange the grilled zucchini slices, slightly overlapping, on the puff pastry base. Cover with slices of scamorza cheese or another soft melting cheese.
Now place the potato slices all over the surface, slightly overlapping them. Salt, sprinkle with the chopped rosemary. Drizzle with oil and generously sprinkle with grated Parmesan cheese.
Bake the Savory Potato and Zucchini Pie in a preheated oven at 375°F in static mode for 25 minutes. Let it cool slightly and enjoy it hot or at room temperature.

If any Savory Pie is left over, store it in a container in the fridge for 2 days or you can also freeze it. You just need to reheat it for a few minutes in the oven or microwave to make it crispy again as if it were freshly made.
For a more flavorful pie, you can add slices of cooked ham or speck on top of the scamorza cheese slices.
