Ingredients for Pumpkin Flatbread

  • 12 oz pumpkin (cleaned)
  • 1 cup cold water (cold)
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 1 sprig rosemary
  • to taste salt
  • 1/4 cup corn flour

What You Need to Prepare Pumpkin Flatbread

  • Grater
  • Baking Pan

How to Prepare the Crispy Pumpkin Delight

  • Clean the pumpkin by removing the skin, seeds, and inner fibers. Cut it into thin strips using a large-hole grater into a bowl.

  • Pour the cold water into a bowl. Add a pinch of salt and 2 tablespoons of olive oil. Now add the grated pumpkin and grated Parmesan cheese. Mix.

  • Add the flour and mix with a spatula until you have a sort of thick, lump-free batter. Grease a rectangular baking pan; mine measures 8.7 x 11 inches.

  • Pour in the mixture, leveling it with the spatula into a thin, even layer. Spread corn flour over the surface for special crunchiness, chopped rosemary, and a drizzle of olive oil.

  • Bake the Pumpkin Flatbread in a preheated static oven at 392°F for 23-25 minutes, placing it in the middle of the oven.

If you prefer, you can substitute the rosemary with thyme or other mixed herbs

If any Pumpkin Savory Tart is leftover, store it in a container in the fridge. You just need to heat it for a few minutes in the oven to make it crisp and fragrant as if freshly made
