THIN, CRISPY AND TASTY FENNEL FLATBREAD

Tasty and delicious fennel flatbread. Fennel is so good! So light and versatile, it can be used in many recipes. Today I prepared them with a simple and special recipe: Baked Fennel dipped in a light and crispy batter. A recipe that is prepared in just a few minutes, you just need to slice the fennel very thin and then prepare the batter. I added cornmeal on the surface for extra crunchiness. Ingredients for the fennel in batter

  • 1.1 lbs fennel
  • 1 cup water
  • 1 cup flour
  • 1.4 oz grated parmesan cheese
  • 2 tbsp extra virgin olive oil
  • to taste salt
  • 1 sprig rosemary
  • 1 oz cornmeal

What you need to prepare Baked Fennel

  • Mandoline
  • Baking Pan

How to prepare the Fennel Flatbread

  • Clean the fennel by removing most of the stems, outer parts, and the harder base. Wash them under running water.

  • Using a mandoline or slicer, cut the fennel into very thin slices.

  • Prepare the batter. Pour the water into a bowl. Add a pinch of salt and gradually add the flour while stirring with a whisk to avoid lumps.

  • Add the grated parmesan, 3 tablespoons of extra virgin olive oil, and the chopped rosemary. Mix well to obtain a smooth and fluid batter.

  • Pour the batter into the bowl with the fennel, and using 2 spoons, mix to combine them with the batter.

  • Pour the mixture into an oiled rectangular baking pan, mine measures 8.7 x 11 inches. Level with a spatula into a thin layer.

  • Sprinkle the surface with some cornmeal and finally a drizzle of extra virgin olive oil.

  • Bake the Crispy Fennel Flatbread in a preheated oven at 375°F (static mode) for 30 minutes.
