TURKISH BOREK: The Most Searched Savory Pie Recipe on the Web

Turkish borek with spinach and feta is a simple and tasty savory pie. The Borek is a traditional dish of Turkish cuisine. A Savory Pie of ancient origins that I discovered through Turkish TV series that are now very popular. Could I not try it? The name of this dish comes from the Turkish word bur- “to roll,” which can describe any dish made from rolled dough. The main ingredient of börek is yufka, a very thin sheet of puff pastry. The börek is prepared by filling the pastry with cheese, minced meat, spinach, other vegetables, and/or cheeses. Since it was my first time making it, I opted for phyllo dough instead of making the pastry myself, and the result pleasantly surprised me. A Spinach and Feta Savory Pie that is crunchy and flavorful. My family loved it, and I will soon prepare the meat version. Ingredients for Borek with spinach and feta

  • 4 sheets phyllo dough
  • 7 oz feta
  • 9 oz spinach, frozen
  • 2 tbsps butter
  • 2 tbsps sesame seeds
  • to taste salt
  • 1 pinch pepper

How to prepare the Savory Pie with Phyllo Dough

  • To prepare the Turkish Borek, you can use fresh or frozen spinach. If you use fresh spinach, clean, wash, and cook them in a saucepan with very little water and covered for 7-8 minutes. If you use, like me, frozen spinach, cook them still frozen in a covered saucepan over low heat. This way, there’s no need to add extra water; the water released during thawing will be sufficient.

  • Simply chop the spinach on a cutting board with a knife. If you prefer them finer, you can also use a mixer or blender. Add a bit of salt and a pinch of pepper to the spinach. Do not add too much salt because the feta you will add is already quite flavorful. Gently lay the phyllo sheets on the work surface. Brush them with water to keep them from drying out.

  • Place a strip of spinach a few inches from the edge. Add crumbled feta over the spinach. Prepare all 4 sheets in the same way. Roll them starting from the side with the filling.


  • Arrange the prepared rolls inside a greased or parchment-lined baking dish. Start from the center, forming a spiral, and then continue with the other rolls, always proceeding in a spiral.

  • Brush the entire surface with melted butter and then decorate with sesame seeds. Bake the Turkish Borek with spinach in a preheated oven at 390°F in a convection mode for 18-20 minutes.

  • If you prefer, instead of a single savory pie, you can prepare 4 single-serving swirls.

If any Spinach Savory Pie is left over, store it in the fridge in a container. Just reheat it in a hot oven for a few minutes to make it crispy as if freshly made.
