Valentine’s Day Cupcake the perfect dessert for the most romantic day of the year. Even though I don’t like celebrating love only one day, I love baking desserts. The recipe I want to share with you today is for super soft and fluffy red Muffins decorated with a soft white cream and lots of sugar hearts. The recipe is very simple, and you can prepare the Muffins in advance and decorate them just before serving. They are perfect as a special treat for a romantic dinner, perhaps by candlelight, or for a festive breakfast. For the frosting, I simply used whipped cream and creamy spreadable cheese for a dense and compact cream that is perfect for decorating muffins or even cakes. Ingredients for Romantic Muffins
- 1/2 teaspoon egg
- 1/3 cup sugar
- 3 1/3 tablespoons vegetable oil
- 1/4 cup milk
- 1/2 cup flour
- 1/3 cup rice flour
- 1/2 teaspoon food coloring (red)
- 1 teaspoon baking powder
- 1/2 cup heavy whipping cream
- 1/3 cup powdered sugar
- 4 1/4 oz cream cheese (like Philadelphia)
- 2 tablespoons colored sprinkles (heart-shaped)

How to Make Valentine’s Day Cupcakes
Beat the egg with the sugar in a bowl, preferably with an electric mixer, for 4-5 minutes until you have a light and frothy mixture. Add the vegetable oil and milk and mix.
Add the sifted all-purpose flour and rice flour. Also add the red food coloring and baking powder. Mix well.
Place 8 silicone muffin molds on a baking tray and fill them 2/3 full with the mixture. Bake the muffins in a preheated 356°F oven in static mode for 18-20 minutes. Always perform the “toothpick test” to check the interior baking. Let them cool.
Whip the cold heavy cream with the powdered sugar. Then add the cream cheese and mix. Transfer the cream to a piping bag with a large star tip.
Decorate the top of the Muffins with the cream by piping concentric circles from the outside in. Finish by decorating with sugar hearts.

You can prepare the Muffins in advance and store them in a container, decorating them just before serving.
For coloring, I used red food coloring powder, but if you prefer, you can use liquid coloring, adding a few drops at a time until you reach the desired color.
