How to make Walnut and Cinnamon Cookies
Chop the walnut kernels with a mixer. I recommend not chopping them too finely because it’s nice to have some pieces of walnut. Mix the egg with the sugar in a bowl. You can simply use a hand whisk or a fork.
Add the melted butter and mix. Continue the preparation by adding the sifted flour, baking powder, and cinnamon. Also add the chopped walnuts.
Mix well using a spatula or a fork. You should get a soft dough. Let it firm up in the fridge for 30 minutes.
Pour the powdered sugar into a small bowl. Shape the cookies: take a small portion of dough and roll it between your hands to form a ball. Roll it in powdered sugar and then place it on a baking sheet lined with parchment paper.
Form all the Walnut Cookies in the same way, placing them slightly apart on the baking sheet. Bake the cookies in a preheated oven at 356°F (180°C) in static mode for 12-14 minutes.
The cookies will rise and form many small cracks on the surface. Let them cool before transferring them to a tray because right out of the oven they are still soft.
