Ingredients for Pistachio Sweet Salami

  • 7 oz white chocolate
  • 1.75 oz unsalted pistachios
  • 2.8 oz pistachio cream
  • 5.6 oz digestive biscuits
  • as needed powdered sugar (to decorate)

How to Prepare the Chocolate Pistachio Salami

  • Coarsely chop the digestive biscuits. I simply put them in a paper or food bag and then crushed them with a meat tenderizer. They should not be finely chopped but just reduced to small pieces.

  • Melt the white chocolate pieces in a double boiler. Chop the unsalted pistachios. Pour the melted white chocolate, pistachio cream, biscuits, and pistachios into a bowl.

  • Mix with a spatula. Let the mixture firm up slightly for 20 minutes in the fridge. Lay a sheet of plastic wrap on the work surface and sprinkle it with powdered sugar.

  • Compact the mixture with your hands and then give it the classic cylindrical shape of a Chocolate Salami. Wrap it in the plastic wrap and let it firm up in the fridge for at least an hour or more. Before serving, sprinkle it with powdered sugar.
