Whole wheat apple and raisin cake the softest and the best you’ve ever tasted. Aren’t apple cakes just delicious! The apple cake is one of the very few desserts my grandmother used to make, simple and genuine sweets, and if I close my eyes, I can still smell that delicious scent. Grandma would leave the Cake to cool on the windowsill right after baking, and we little ones would eagerly wait to try a slice. The recipe I want to share with you today is for a soft and fluffy Apple Cake to which I’ve added some whole wheat flour for a more rustic and delicious flavor. A delightful cinnamon aroma filled my house in an instant and I’ll leave you to imagine how hard it was to resist tasting a warm slice! I also recommend not missing the recipe for my Mini apple crumbles and the recipe for the Soft cake with jam. Many pieces of apple inside and many slices on top for a moist, soft, and fluffy cake; perfect for breakfast, as a snack or any time of the day. Let’s hurry into the kitchen and prepare a delicious Whole Wheat Apple Cake together

How to prepare the Whole Wheat Apple and Raisin Cake
Peel and clean the apples. Cut half into small cubes and the other half into thin slices. Soften the raisins in a small bowl with hot water. Beat the 2 whole eggs with the sugar for 7-8 minutes until you have a light and frothy mixture.
Add the melted butter and a container of plain yogurt. Stir.
Add the sifted all-purpose flour, whole wheat flour, and baking powder. Stir.
Finally, add the apple cubes, cinnamon, and drained raisins. Stir with a spatula to combine them into the batter.
Pour the batter into a greased or parchment-lined cake pan. I used a square 9-inch pan, but you can also use a round pan.
Level the batter with the spatula and arrange the apple slices on the surface, letting them sink slightly into the batter.
Bake the Whole Wheat Apple and Raisin Cake in the preheated oven at 356°F in static mode for 35-40 minutes. Always do the “toothpick test” to check the cooking inside the cake. Let it cool before transferring it to a serving plate and decorate as desired with some powdered sugar.
See you tomorrow with a new recipe, a hug, Loredana
Loredana’s Tips
The Apple Cake keeps in a container for 2-3 days
If you prefer a more rustic taste, you can use only whole wheat flour: 170 grams
With the same amounts, you can also choose to use a round cake pan 9-10 inches in diameter
