ZUCCHINI ALLA SANFELICIANA the unexpected recipe

Zucchini alla Sanfeliciana the special recipe to prepare zucchini. By chance, while watching a TV show, I discovered this recipe for preparing zucchini. It is an ancient recipe of Lazio origin and more precisely from San Felice al Circeo from which it takes its name. It is a Baked Zucchini Casserole that is very simple to prepare and perfect both as a side dish and as a light and tasty vegetarian main course. It is prepared in a few minutes and conquers everyone at the table. A delicious crispy crust makes them really irresistible and delicious. I used classic green zucchini to prepare them, although in the typical recipe, the zucchinis from Agro Pontino, typical of the recipe’s origin area, are used. Ingredients for Baked Gratin Zucchini

  • 1.3 lbs zucchini
  • 1/2 cup breadcrumbs
  • 2/3 cup grated Parmesan cheese
  • 1/3 cup flour
  • to taste extra virgin olive oil
  • 1 bunch parsley
  • to taste salt
  • 1 pinch pepper

How to prepare the Baked Zucchini Casserole

  • Wash the zucchini. Trim the ends and slice them into thin rounds. Place the zucchini in a colander and salt them. Mix them well. Place the colander in a bowl and let them rest for about an hour.

  • This way, they will lose their water and become very sweet. Rinse the zucchini under running water and let them drain. Place them on a cotton cloth to dry.

  • Pour the flour and half of the grated Parmesan cheese into a bowl. Mix them together. Also, add the zucchini and use 2 tablespoons to turn them over well to coat them all over.

  • Oil a rectangular baking dish and lay the zucchini in a thin layer. Prepare the coating in a bowl: mix the breadcrumbs with the remaining grated Parmesan cheese.

  • Add the chopped parsley, a pinch of pepper, and 2 tablespoons of extra virgin olive oil. Mix well. Sprinkle this coating over the zucchini. Finish with a drizzle of extra virgin olive oil.

  • Cook the Zucchini alla Sanfeliciana in the hot oven at 375°F in static mode for about 25 minutes. If you prefer to cook them in an air fryer, reduce the cooking time by a few minutes.

Loredana’s Tips

If you have leftover zucchini, store them in the fridge in a container for 2 days. You only need to reheat them for a few minutes in the oven or microwave to make them taste as fresh as when first cooked

For a more flavorful dish, you can substitute Parmesan cheese with Pecorino cheese

If you’re in a hurry, you can skip the step of salting the zucchini and proceed directly to preparation
