Ingredients for the Pasta with zucchini
- 12 oz spaghetti
- 1.1 lbs zucchini
- 4 tsp extra virgin olive oil
- 2/3 cup grated Parmesan cheese
- 1 bunch parsley
- to taste salt
- 1 pinch pepper
- 1 clove garlic
How to prepare the Zucchini Spaghetti
Wash the zucchini, trim the ends, and slice them thinly. Pour the oil into a pan. Add the garlic clove and zucchini. Season with salt and let the zucchini cook over medium heat for 8-10 minutes, stirring often with a spoon.
While the zucchini are cooking, cook the spaghetti in plenty of salted water. At the end of cooking, remove the garlic clove. Drain the pasta al dente, reserving the cooking water. Pour the spaghetti into the pan with the zucchini.
Add the grated Parmesan cheese, a pinch of pepper, and a few tablespoons of the cooking water. Mix well over medium heat to make the spaghetti creamy and delicious. At the end of cooking, add a sprinkle of chopped parsley and serve.
