Ingredients

  • 2 artichokes (already cleaned)
  • 2 eggs
  • 1/3 cup cheese (grated (about 1.1 oz / 30 g))
  • 1/3 cup all-purpose flour ((about 1.4 oz / 40 g))
  • salt
  • 1/2 lemon zest

Steps

Let’s start preparing the

  • Let’s start preparing the artichoke fritters: begin by slicing the artichokes thinly and place them in a bowl.

    Prepare the batter: in a bowl break the eggs. Add the grated cheese, the grated lemon zest, the salt and the flour.

  • Mix until you obtain a smooth batter without lumps.

    Now add the artichokes and mix.

    Pour extra virgin olive oil into a pan and heat it over medium-low heat. Spoon a heaping tablespoon of batter into the pan and cook for about 4 minutes per side until they are nicely golden.
