BAKED VEGETABLE MIX

BAKED VEGETABLE MIX is a great light side dish and very quick to prepare. Vegetable mix is a very simple dish that we can use in many different ways to have many tasty and creative alternatives.

Vegetable mix a tasty, colorful, and light side dish perfect to accompany meat, fish dishes but also to enrich a thousand different dishes like savory pies, puff pastries, and first courses.

We can use the vegetable mix to prepare bruschetta as an appetizer, spreading the vegetables on toasted bread and drizzling with a little extra virgin olive oil.

You can prepare the vegetable mix in the oven using the vegetables you prefer and following the seasons, so you always have a different side dish for flavors and colors.

Ingredients

LET’S SEE TOGETHER WHAT WE NEED TO PREPARE

  • 2 yellow bell peppers
  • 2 carrots
  • 2 zucchini
  • 1 eggplant
  • 1 onion
  • 2 potatoes
  • 1 clove garlic
  • to taste rosemary
  • to taste salt
  • to taste extra virgin olive oil

  • 1 Baking Pan
  • 1 Cutting Board
  • 1 Knife

Steps

Let’s start preparing the

  • Let’s start preparing the vegetable mix.

    Wash and clean all the vegetables, dry them.

    In a large bowl, cut the zucchini and eggplant into pieces, then proceed to dice the other vegetables like bell pepper, potatoes, carrots…. which take longer to cook.

    Add the onion in slices and the whole garlic clove (so it will be easier to remove)

  • Adjust with salt and extra virgin olive oil and mix everything.

    Take a baking pan covered with parchment paper and pour the vegetables.

    Bake in a preheated convection oven at 392°F for about 25-35 minutes.

    The vegetable mix is excellent to eat both hot and at room temperature.
