Batter for Crispy Frying

Batter for crispy frying, is the preparation to achieve a light, dry, and crispy fry. To make it, we only need two ingredients: flour and cold beer or very cold sparkling water. The batter must have the right consistency, neither too liquid nor too thick: to be smooth and velvety, it’s necessary to respect the proportions of beer and flour, and mix with a whisk by hand to avoid lumps.

The beer will make the batter for frying light and crispy and will enhance the taste of the food without making it heavy. We can also use it to fry chicken bites, squid rings or calamari.

It really works well for all ingredients.

  • 3/4 cup flour
  • 2/3 cup beer (cold)
  • 1 tablespoon extra virgin olive oil
  • to taste salt

  • 1 Hand Whisk

Steps

Let’s start preparing

  • Let’s start preparing the batter for frying: pour the flour, salt, and extra virgin olive oil into a bowl and mix everything well.

    Mix with a hand whisk and start beating while adding the very cold beer from the fridge until you get a smooth and homogeneous cream.

    Let the batter rest in the fridge for 15 minutes.

    The batter is ready and perfect for all types of vegetables!

  • For a crunchy and light frying batter, we can substitute beer with very cold sparkling water.

    For a gluten-free batter, we can use yellow cornflour or a mix of gluten-free flours.

    Make sure that the beer is also gluten free.
