Bean and Spinach Soup

Bean and Spinach Soup, is a super quick dish to prepare thanks to canned borlotti beans. A delicious and healthy recipe that you can revisit with other vegetables like Swiss chard or chicory.

An excellent dish, well balanced nutritionally: vegetable proteins from beans, great to serve for lunch or dinner. You can substitute the borlotti beans with pre-cooked chickpeas, and the result will be great in both versions.

A rustic dish, very tasty, a vegetarian recipe rich in proteins, fibers, vitamins, and minerals, and it is prepared in a few minutes with easily available ingredients.

Ingredients

  • 1.5 cups canned borlotti beans
  • 9 oz spinach
  • 1 tbsp tomato paste
  • 5 cherry tomatoes
  • 1/2 red onion
  • salt
  • pepper
  • extra virgin olive oil
  • 1/2 cup water

Tools

  • 1 Pan
  • 1 Wooden Spoon

Steps

  • Let’s start by preparing the bean soup: cut the cherry tomatoes, rinse the spinach and beans under running water. Sauté the finely chopped onion in a pan with a drizzle of hot oil, add the spinach, season with salt and pepper.

  • Add the halved cherry tomatoes, the borlotti beans, the tomato paste, and the water. Cover with the lid and let it cook for about ten minutes.

    Here is our soup, ready to be served hot with a drizzle of raw extra virgin olive oil.
