Chickpea Gnocchi, are tasty dumplings easy to prepare and perfect to be dressed in a thousand ways. We only need chickpea flour, water and a tablespoon of extra virgin olive oil and you’re done!
If you have chickpea flour at home, in no time you can prepare fantastic gnocchi that will save your dinner or lunch.
We can also prepare them the day before and store them in the fridge on a tray well spaced between them, then we just need to plunge them in salted boiling water and dress them as desired.

Ingredients
- 2 1/2 cups chickpea flour
- 2/3 cup water
- 1 tablespoon extra virgin olive oil

Steps
Let’s start preparing the chickpea gnocchi: take a bowl, pour in the chickpea flour, slightly warm water, extra virgin olive oil, and a pinch of salt.
Start kneading the ingredients until you get a homogeneous and compact dough.
Sprinkle a worktable with a little chickpea flour and transfer the dough.
Break off pieces of dough and form rolls.
